can you create a meal based only on local, fresh ingredients?



Challenge 2- Shop at a local farmers market this saturday and find ingredients needed to create a complete, fresh, organic, free-range meal for your friends or family. Comment on the foods you chose, what you made, and the feedback you received for your efforts. Attach the recipe you used.

  1. For my vegan dinner that I made everything came from the locals in padre island. I bought carrots, mango , mushrooms, corn , bell peppers strawberries almond milk and Celery. I was making a stir fry on a long stick I cut then all up and added in seasoning. Then I cooked them in a pan with a little bit of olive oil. Next I let them cook till they were not over done pulled then off and one by one put on a long wooden stick. The ravers were really good when I tried then and I really enjoyed it. Even though there was no meet on the stick it still was a great experience knowing I bought all these veggies and fruit fresh from growers that I saw in person and talked to. It was a interesting experience and I will do it again some day.

  4. For my local dinner I made dry-rubbed pork chops, smashed Potatoes, green beans, and fried green tomatoes. I went to the Coppell Farmers Market and bought some butterfly Pork Chops from a local farm and bought a packet of a homemade rub called "Rusty Onion". I let the meat sit in the rub overnight and threw them on the grill the next day for about 20 minutes. For my sides I bought 7 red potatoes, a pound of green beans, five green tomatoes, organic garlic, and local eggs. I threw the green beans into a pan with a little bit of butter, chicken broth and garlic and let it simmer for 15 minutes. For the potatoes, I cut them in half and put them into a pot with the skin on, covered them with cold water, and let it come to a boil. Once they were done I mashed them with a little bit of milk, butter, salt & pepper, and garlic. For the fried green tomatoes, I sliced them and dipped them through a series of local eggs, flour, and cornmeal and let them lightly fry in a shallow pan of canola oil. Everything was delicious and my parents told me they wished I had a project every week so that I could cook for them!

  5. Over the weekend, some friends and I went to the farmer's market to make dinner that night! We picked up a garlic basil pasta from Lucido's pasta farm, that we boiled and mixed with a sauce that contained olive oil, fresh chicken, garlic, onions, tomatoes, and basil from a basil plant we bought. From another vendor, we bought a bag of fresh salad, and found a homemade Italian vinaigrette that was absolutely delicious. We also used a fresh block of mozzarella, more tomatoes, basil, olive oil and balsamic vinegar to create a caprese, and we served it with a baguette we bought from a farmer who had a variety of breads to choose from. Six friends and I sat around our table in our backyard and enjoyed the beautiful evening and great meal!
