This year in ESS, we will focus on global 21st century issues that threaten our beautiful planet. It will be the responsibility of this and future generations to find solutions to these problems through raising awareness, discovering new technology, rewarding innovation, and by passing legislation. can you go strictly vegan for one full day?
Challenge 1-How difficult is it to be a vegan? Now that you're Vegucated, try out a healthy, vegan diet for one full day, based on veggies, fruit, whole grains, and legumes. Comment on your experience, noting what you ate and how you felt.
can you create a meal based only on local, fresh ingredients?
Challenge 2- Shop at a local farmers market this saturday and find ingredients needed to create a complete, fresh, organic, free-range meal for your friends or family. Comment on the foods you chose, what you made, and the feedback you received for your efforts. Attach the recipe you used.

how much do you rely on carbon-producing transportation?
Challenge 3- For one full day (from the time you wake up until you go back to sleep), free yourself completely from carbon-producing transportation, such as cars, motorcycles, and elevators. For this challenge you may not carpool with anyone. Comment on your experience walking, biking, skating, etc., all day without the use of fossil fuels.
how much trash do you produce each day?
Challenge 4- For one full day (from the time you wake up until you go to sleep again), carry with you all the trash you produce in one day. Comment below about your experience and describe how much, and what, you ended up with at the end of the day.
